I love projects that are simple but have a little something interesting to make them more fun to knit and to wear and use.
Emily from Nap-time Creations has a great little knit cowl that fulfills that wish. It uses a simple stitch pattern (moss stitch), is worked in the round and is not very big, so you can finish it pretty quickly.
But it also uses just a bit of a bold color of yarn (4 rounds on each end of the project), which gives it just the right amount of pop. Fun to knit, fun to wear; what could be better?

I like color block as opposed to carrying thread behind for little design elements. Then again I’m a slow knitter and need less complicated projects so I don’t lose my place.
