This bulky knit Ammara Throw designed by the Blue Elephants was originally made on a knitting machine, but of course you can knit it by hand, too.
She worked it in one long piece, intarsia style, where you knit across one color, drop that yarn and pick up the next, twisting the two yarns together so the pieces join together.
If 172 stitches in bulky yarn sounds like too much for you to work in one piece, you could also work it in vertical panels and sew them together when you are done.
