Linen stitch and half linen stitch are stitch patterns that were just made for using multicolored yarn. The slip stitches break up the colors and make your project look more complicated than it is, and I think the knitting goes a little faster because you’re slipping so many stitches regularly.
Smiling Colors has a great tutorial for a Half Linen Stitch blanket, which she worked with a multicolored yarn but you could absolutely do as a stash-busting project instead (blankets are my favorite stash-busting projects).
She offers tips on how many stitches to cast on and how long of a needle to use, as well as how much yarn her project used if you want to estimate from that to make a bigger one.
