Temperature scarves and blankets have been in the knitosphere (crocheters make them too, of course) for a few years now. The idea is that you stitch a row for each day of the year, with the color of yarn you choose corresponding to the temperature outside. Check out these Temperature knitting patterns on Etsy.
Lion Brand’s blog has a great rundown of how to start a temperature project, including picking colors, tracking temperatures and choosing projects that can be worked into such striping projects.
There are other ways you can use knitting to track things like your mood, how long you have to wait for the train, or lots of other things.
