I love to knit baby blankets, and I like patterns that have fun details both for the knitter and the parents and child to enjoy.
This Easy Baby Blanket from The Things We Do is a lot of fun because it uses lots of different colors and different stitch patterns as you go along. Looking for more Baby Knitting patterns? Check these out on Etsy.
The blanket incorporates stripes of stockinette, broken rib, double seed stitch, diagonal rib, double broken rib, basketweave, garter rib and seed stitch, with the pattern changing when you change colors.
You could easily do this as a stash buster sampler and change patterns and colors as often as you like (though be aware that your gauge may vary slightly in different stitch patterns, so a border might be in order to keep everything tidy.
